This month I chose a recipe I found on Dr. Oz’s website called “Microwave Veggie Delight” as my recipe that is healthy, easy to make, and something I’ve never made before. This one is also one that I have never eaten before, so there were many firsts for me with this one. Since the recipe is available on a website, I decided not to include all the details like I have before when I got my recipe from a book.
This recipe made me think of spaghetti when it was done and I began eating it. with the lengths of zucchini strips you use a veggie peeler to slice out thin strips from the inside of the zucchini that mimic pasta. Also has spaghetti sauce, garlic, onion, basil olive oil, salt, pepper, and Parmesan cheese.
I really wasn’t sure how I felt about the idea of putting spaghetti sauce on zucchini, but in the end I loved it, and am adding this to my list of VERY easy recipes to make for those times when I want something a little different. The only cooking required is 2-3 minutes in the microwave, and to be honest it took me longer to chop the onion and mince the garlic then it did to heat the dish up. It’s one of those dishes that if I had no clue how it was made, I would probably find myself assuming it was a challenging dish to make, because it just kinda has that look to it, so for those of you who want to make something that looks like it took more work then a tossed salad, but really didn’t, this is one I would recommend. start to finish though I think it took me all of 20 minutes to assemble this dish …. less time then it takes to make mac-n-cheese on the stove.

I was totally unsure about the idea of spaghetti sauce on zucchini but was VERY pleasantly surprised, it truly rocked in my book.
Well, 4 recipes down for the year, and only 8 to go to meet my goal of trying 1 new recipe per month this year as one of my goals I wanted to try to do in 2012.
